Winemaking and ageing
Hand picked only, whole bunch pressed, the grape must is cooled to 4°C to leave a maximum of natural residual sugar. A slow fermentation is done. The wine is
then aged during 4 months on lees and pump-over. |
Wine description
Deeply fruity on the nose, the palate blends spices and aromas of ripe fruits such as the mango and the quince. Rich, intense and well-balanced, this wine is quite powerful and ends on a nice, fresh and pleasant touch.
Wine and food pairing
Appetizers, vegetable dips, spicy salads (Mexican, Moroccan, Indian), fish cooked with strong or spicy ingredients (curry), exotic recipes (full-bodied flavours, spicy, sweet and sour), tandoori chicken, curried pork, tacos, strong cheeses and an After-Dinner wine.
